Ingredients:

2 cups cashews soaked for 5-6 hrs, then washed
2 tsp pepper powder
Salt as per taste
1/2 cup Water
1 red / yellow bell pepper

Method:

1. Blend soaked cashews to achieve thick paste of smooth consistency
2. Let this paste sit for 5-6 hrs till you see the fermentation, this is cashew cream cheese
3. Mix in salt and pepper , cashew mayonnaise is ready

To make zesty bell pepper dip

Roast the red/yellow pepper on gas stove.

Blend it with the cashew mayonnaise as mentioned above.

The dip is ready.

Enjoy with cut vegetable sticks.

Also can be used as a spread on paratha/bread.
